20160803_201746_resizedThe Andalusian cuisine is similar to Spanish lifestyle. A true explosion of colours and flavours, rooted in the patchwork of cultures that is the Andalusian history. Throughout the year there is access to best vegetables and fruits, olive oils, fresh fish, squid and seafood, meat from Iberico pigs, lamb and wild boar – imaginations making the mouth water.

The cooking courses in Garden of lemons are characterized by a relaxed and joyful atmosphere amongst pots and pans – with the freedom of choice to only participate to the extent you would like. During the week three cooking sessions are held: a “tapas-kitchen-class” with an introduction to sherry with classics such as tortilla, salmorejo, remojón, croquetas and ensaladilla rusa. A “Spanish-Arabic-Middle-eastern kitchen-class” where the magic of saffron, cumin, cinnamon, cloves, nutmeg, oranges, lemons and almonds transform vegetables, meat, chicken and fish into dishes connecting you to a 1001 nights tales. Finally, the “classic Spanish kitchen-class” embraces the traditional Spanish cuisine in dishes such as cold almond soup (ajo blanco), squid a la plancha, long braised lamb, pig or rabbit, creamy ice cream with Málaga raisins and of course crème caramel (flan).

During the week we take trips to local food markets, we experience Granada’s beauty on a guided tour and taste interesting wines from the local wine bodegas. For, even though wine has been cultivated in Andalusia since the earliest times, there have been many recent developments where tradition has been linked to new knowledge and taste ambitions. We’ll collect herbs in the garden and the countryside and will be visiting Spain’s best ham-production (jamón) maturing area high in Alpurrajas Mountains.
